Despite my late night on two hours’ sleep, I wasn’t that sluggish getting up this morning. Breakfast was clean and easy: oatmeal with flaxseed and cinnamon, half an apple, and yogurt.
Lunch was the UNBELIEVABLY delicious Zucchini Cashew soup and Microgreen Salad. If you have never thought of combining those two items in a soup, then I suggest you give it a shot.
Dinner was Baked Tempeh with brown rice and steamed vegetables. I was not a fan of the tempeh when it was in the nori rolls. However, when it has been marinated in something, it isn’t too bad!
